Lamb Cutlets with Roasted Vegetables


I just love One-Pan dishes and honestly think that they are a Godsend. One of the pluses is that one-pan meals do not make my kitchen look like it has just been hit by a tornado! They are self-contained, full of texture, flavourful and there is no need for any accompaniments.

This oven-baked lamb with a rainbow of vegetables is hearty and full of flavour – a must try!

The lamb turns out tender and juicy. It is one of those dishes that is a total hit with both our family and friends. Seriously though, this lamb recipe is lip smacking good. I guarantee you that you’ll make it once and you’ll make it again and again. It is just SO good!

Lamb Cutlets with Roasted Vegetables

Cook Time 50 minutes
Total Time 1 hour 5 minutes

  • 3 courgettes (600g) chunks
  • 3 carrots (600g) chunks
  • 200 g cherry tomatoes
  • 1 red onion wedges
  • 1 tbsp Olive Oil
  • 1 tsp rosemary
  • 1 tsp thyme
  • 8 lamb cutlets cutlets
  • Salt & Pepper


  1. Whisk the olive oil with the rosemary, thyme, salt and pepper.
  2. Heat oven to 180°C. Place the carrots, courgettes and onion on a baking tray and drizzle over the olive oil mixture.
  3. Roast for 25 minutes.
  4. Meanwhile, trim the lamb cutlets of as much fast as possible.
  5. Take the vegetables out of the oven and place the cutlets on the baking tray and return to the oven for 10 minutes.
  6. Turn the cutlets and cook for a further 10 minutes.
  7. Take the baking dish out of the oven, cover with foil and let it rest for 5-7 minutes.
  8. Serve and Enjoy!
