This curry caulibroc ‘rice’ is bursting with flavour!
Thanks to the cauliflower and broccoli ‘rice’, I can still enjoy my curries – guilt-free!
I’ve served this dish with my Pork Scotch Eggs and added a few cashew nuts!

Print-Friendly Curry Caulibroc rice:
Curry Caulibroc rice
- 1 tbsp ghee or other cooking fat
- 2 cups cauliflower rice
- 2 cups broccoli rice
- 1 red bell pepper small cubes or slices
- 1 green bell pepper small cubes or slices
- 3 eggs
- ¼ tsp. ginger
- ¼ tsp. oregano
- 1 tbsp. curry powder
In a pan, add 1 tbsp. cooking fat and sauté the peppers.
Add the cauliflower and broccoli 'rice' and cook on low heat; stir until combined.
In a separate saucepan, add 1 tbsp. cooking fat on medium heat. Add 3 whisked eggs. Gently stir until scramble egg consistency. When eggs are cooked (solid), add to the caulibroc mixture and combine well.
Cook for 3 minutes and serve.
