Moist and Tender Swordfish Steaks with Cauliflower Fritters

Serves: 4

Calories:  +/- 250 per serving (swordfish)

Gluten & Lactose Free

Ingredients:

4 swordfish steaks
2 cloves minced garlic
2 tbsps. Chopped parsley
1 tsp. basil
1 tsp. mint
2 tbsps. Olive oil
Juice & rind of 1 lemon
Salt & pepper

Method:

In a bowl, whisk the olive oil, lemon juice and rind, garlic, herbs, salt and pepper. Spread the mixture onto the steaks and let them marinate for an hour. In a griddle pan grill the swordfish over medium heat for 4-6 minutes on each side.
